Nutrition system of population as a natural and socio-economic system: methodology of formation and development

Abstract

With the aim of complex analysis of the nutrition status of the population in the regions of Ukraine this article explores the functions of production, sale and consumption of food products and services, as well as the basic structure of the food chain from field to consumer. Methodology of research deals with the structural-functional approach to the formation of nutrition of the population, taking into account the public sector and households.

The category and structure of public catering as a cross-sectoral cluster of natural and socio-economic character are proposed. The system of indicatorsof nutrition and indicators of the functioning of the main branches and sub-systems such as agriculture, food industry and trade, restaurant business and households have been worked out. This article contains a recommended structure of the public catering, food cluster, system of catering, indicators and measurements; and indicators of catering sectors functioning: agriculture, food industry and trade, restaurant business and households.

Assessment of the scope of supply sectors of the population and the effectiveness of their operation is the result of management activities. It describes the end result of using natural and economic potential of the resource base and the scope of supply of the population. The ratio of the food cluster with the actual scope of the population nutritional status  is proposed as an optimality criterion and benchmarks of management and development efficiency. Single, complex and integral indicators of functioning of nutrition sphere which in relation to indicators of the level and quality of nutrition reflect the efficiency of the use of the scope of nutrition sphere and meet people's needs for products and services supply have been calculated.
